Make 30 ml espresso (or very strong coffee) and let it cool for 2 minutes.
Add it to a shaker with 40 ml tequila, 20 ml coffee liqueur and 1 tsp sugar.
Fill with ice and shake very hard for 20 seconds to build foam.
Strain into a chilled coupe glass.
Serve within a minute while the foam is thick, topped with 3 coffee beans, alongside a piece of dark chocolate.
