Warm 60 ml apple juice with 1 star anise in a small pan for 1 minute, then let it cool.
Pour into a tall glass full of ice, star anise and all.
Add 10 ml lemon juice and top with 120 ml soda water.
Stir and garnish with a lemon wheel.
Serve right away with a straw while fizzy, alongside apple pie or cinnamon cookies.
