You need

  • sparkling wine
  • pineapple juice
  • passion fruit
  • coconut water
  • lime
  • mint

How to make it

  1. Press 3 mint leaves with 1 lime wedge in a wine glass.
  2. Add the pulp of 1 passion fruit, 50 ml pineapple juice and 30 ml coconut water, then ice.
  3. Top with 80 ml sparkling wine.
  4. A beach-holiday brunch toast with banana pancakes.
