Blend half a ripe peach with 20 ml cold water for 15 seconds.
Add the puree, 60 ml lychee juice, 10 ml fresh lemon juice and 1 tsp honey to a shaker.
Fill with ice and shake for 15 seconds.
Double strain into a chilled coupe glass.
Serve immediately, well chilled and without ice or a straw, with a thin peach slice on the rim.
