You need

  • white rum
  • peach schnapps
  • pineapple
  • mint
  • honey
  • lime

How to make it

  1. Add 4 pineapple chunks, 10 mint leaves, 2 tsp honey and 15 ml lime juice to a blender.
  2. Add 45 ml white rum and 15 ml peach schnapps.
  3. Add 1 cup ice and blend for 20 seconds until frosty and flecked with green.
  4. Pour into a coupe glass and garnish with a mint sprig.
  5. Serve immediately with a short straw, before the frosty mix melts, alongside a few salted crackers.
