In a large jug, add 300 ml chilled lychee juice, 30 ml rose syrup and 30 ml lime juice.
Add a handful of mint leaves and some ice.
Slowly top with 1 bottle (750 ml) chilled sparkling wine and stir once gently.
Pour into 4 glasses, with a lychee in each if you like.
Serve straight away while still bubbly, with a napkin under each glass and cheese crackers on the side.
