Soak 0.25 tsp saffron in 1 tbsp warm water for 2 minutes.
Muddle 3 peach slices with 10 ml lemon juice in a tall glass.
Add 50 ml gin and the saffron water, then fill with ice.
Top with 100 ml tonic water and stir lightly.
