Kaffir Coconut Cloud Fizz

You need

  • gin
  • lime
  • sugar
  • egg white
  • coconut cream
  • kaffir lime leaves
  • soda water

Contains raw egg white. Skip it if you are pregnant or unsure, or use 2 tbsp chickpea water (aquafaba) for the same foam.

How to make it

  1. Tear 3 kaffir lime leaves into a jar and muddle with 3 tsp sugar.
  2. Add 50 ml gin, 20 ml lime juice, 15 ml coconut cream and 1 egg white; shake without ice for 10 seconds.
  3. Add ice and shake again for 12 seconds.
  4. Strain into a tall glass over fresh ice and top with 40 ml soda water.
  5. A weekend brunch treat beside soft appam and vegetable stew.
