Stir 2 drops vanilla essence into 180 ml cold milk.
Fill a tall glass with ice and pour in the vanilla milk.
Slowly pour a double espresso (60 ml) over the top so it sits in a dark layer.
Drizzle 1 tbsp caramel syrup in a criss-cross over the top. Do not stir before serving.
Serve right away with a straw and a coaster, letting each person stir the layers just before sipping.
