Muddle 1/2 chopped ripe peach, 8 mint leaves and 2 tsp brown sugar in a short glass.
Add 10 ml lemon juice and 30 ml cold water, then pack the glass with crushed ice.
Stir for about 20 seconds until the outside of the glass frosts.
Top with more crushed ice and a big mint sprig.
Serve right away with a short straw tucked next to the mint, on a napkin to catch the frosty drips.
