Faux Passion Fruit Martini

You need

  • passion fruit
  • vanilla essence
  • lime
  • sugar
  • soda water

How to make it

  1. Scoop the pulp of 1 passion fruit into a shaker; keep one empty half shell.
  2. Add 20 ml lime juice, 2 tsp sugar, 3 drops vanilla, 30 ml water and ice; shake for 15 seconds.
  3. Strain into a coupe and float the half shell on top.
  4. Serve 60 ml soda water in a small glass on the side.
  5. Serve right away, ice cold and without a straw, with a few salted cashews on the side.
