Muddle 6 basil leaves with 2 tsp sugar in a shaker.
Add 30 ml lime juice, 45 ml cold water and ice; shake hard for 15 seconds.
Strain through a small sieve into a chilled coupe.
Float a small basil leaf on top.
Serve right away while ice cold, without a straw, alongside a small bowl of olives or salted nuts.
