Sprinkle 1 tsp brown sugar over 2 pineapple slices and char them on a hot tawa for 1 minute per side.
Muddle one slice in a tall glass with 0.25 tsp black pepper.
Add ice, 50 ml dark rum, 40 ml pineapple juice and 15 ml lime juice.
Stir well and perch the second charred slice on the rim.
Great with grilled paneer tikka at a backyard barbecue.
